This Bayou Rum is distilled at the Bayou Rum Distillery from locally grown sugar cane in southern Louisiana, USA. The signature recipe uses Louisiana sugar cane and molasses.
The molasses is distilled in copper pot stills and aged primarily in bourbon casks using the solera method. This "Bayou XO MARDI GRAS" matures for 6 years in bourbon casks using the solera method and then in ex-sherry casks.
Intense floral notes rise to the nose, accompanied by aromas of tobacco, cedar and dried fruits. The palate is sweet with hints of tobacco, oak and honey. The finish is long, sweet and spicy with hints of black pepper and sherry.
