Four Pillars Sherry Cask Gin is a barrel matured gin from Australia. It is based on Four Pillars Rare Dry Gin, which is aged in Sherry and Apera casks, giving it added depth, colour and soft sweetness.
The solera is made up of 42 casks, including Spanish Sherry casks and Australian Apera casks. Through cask maturation, fruity and nutty notes develop and combine with the spiced botanical base of the gin.
On the nose, it shows juniper, pine notes, dried fruit, nuts and fine oak. On the palate, the gin is rounded, aromatic and layered, with hints of Sherry, dried fruit, spice, citrus freshness and gentle sweetness.
Four Pillars Sherry Cask Gin is especially suited to sipping over ice or mixing in aromatic cocktails. The producer recommends serves where the cask character can clearly shine through.
