Reypenaer VSOP is crafted following traditional Dutch methods and aged naturally for up to two years. During this period, the cheeses mature in historical cellars under fluctuating temperatures and humidity levels, which shape their unique flavor. As the cheese loses moisture, it develops an intense, rich taste, a darker hue, and delicate mineral crystals.
Chèvre Gris: Refined Goat’s Cheese with Character
Wyngaard Chèvre Gris comes from a small artisanal dairy and matures for ten months in special caves. This controlled aging process results in a creamy-yet-firm texture and a complex, aromatic profile with notes of wood, walnut, and sea salt. Rich in vitamins and unsaturated fats, this cheese is a true delicacy in fine dining and gourmet tasting.
