Historical maturation, just like back then... The Reypenaer cheese is made according to the original tradition. As a result, the cheese wheels are gently aged for 1 or 2 years in a historical manner. The natural fluctuations in temperature and humidity play a crucial role in maturing and give the cheese its exceptional taste. The cheese ripens faster at high temperatures and slower at low temperatures. It is precisely these variations that determine the taste of the cheese. The cheese loses a lot of weight during the maturation, which can last up to 2 years, but therefore develops a very intense taste. The cheese changes colour, darkens slightly and slowly develops mineral crystals.

Special feature: All Reypenaer cheeses come from our listed historical cheese warehouse. The types of cheese ripen there under the influence of nature, and computer-controlled systems are not used. Maturation occurs exclusively through nature with the influence of temperature and humidity fluctuations. The cheese has a lot of time to mature, up to 3 years. The cheese loses a lot of weight during the aging process, but this allows us to guarantee the best taste.
