This natural process takes place without any computerized climate control – only nature’s own temperature and humidity variations shape its distinctive flavor.

Throughout its aging period, the cheese loses much of its moisture and weight, resulting in an intense, full-bodied flavor and a fine crystalline texture. The taste reveals rich notes of chocolate, hazelnut, and caramel, while its color deepens naturally over time. A true reflection of authentic craftsmanship.
